As close as I have been able to gather so far,.....go back to the earliest unicials, and the papryus, and compare against the traditional text. For the gospels, you will have compare the Old Syriac also as it was a translation from some of the original greek.
For mathew, one will have to look at the DuTillet and Munster for comparison against the greek since the greek has been tampered with. Luckily some of the originality came down through in the old latin, which is in those two texts.
Above all, the validity will have to be established in many areas with the apostolic fathers, or as close to them as you can get. Any writing from them after the late 3rd century or so is questionable.
It would have to be an eclectic text to get it right, as you have been able to point out with the ending of matthew. No text can be demonstrated to to be straight from the original, even the neutral texts have this tampering in spots, although smaller in amounts.
